Cavebaby Eats Sweet Potatoes

Sorry folks, no pictures tonight.  But I will share more of how we are feeding our little Cavebaby. 

Roasted Sweet Potatoes 

Sweet potato, peeled and cut into chunks

Coconut oil, 1 – 2 T.

Pumpkin Pie Spice, salt

Toss sweet potatoes in coconut oil and pumpkin pie spice and sprinkle with a tiny bit if salt.  Bake at 325 for about 20 minutes until soft. 

I usually make 2 potatoes at a time so I will have them on hand throughout the week, and they just need to be cut into baby-sized bites and reheated.  They are usually served with a protein source – tonight was leftover Cinnamon Beef Stew from Well Fed.  He loved it!  As for the quantity he consumes, I usually fill a salad plate with his dinner.  He also drinks water, from a regular cup, with a little assistance from me (he is 11 months old).  I have also discovered he really, really likes green beans but he had eaten the last of them the other day.
